Allu bengan curry recipe :

Allu bengan curry recipe is very tasty and very delicious recipe. It's taste is wonderful and mouth watering. Potatoes and brinjal combination is very perfect and very delicious.

Brinjal vegetable are rich source of iron and very good for our health. It's bharta is very tasty and very good. Brinjal have 25% calories ,  many vitamins like A,  C, K, B6 fiber and carbohydrates are present in it.

Brinjal vegetable also called Eggplant it is belong to night family of plants. It is very helpful to produce fresh blood cells.

Allu bengan curry recipe is very easy to prepare and take very short time for preparation so you must try it and enjoy from it's taste.. How I prepare this recipe now we discuss about it :

Potato brinjal recipe
Delicious potato brinjal curry 

Ingredients :

Potatoes: 2 to 3
Brinjal: half kg
Onions :2
Ginger paste: half tsp
Garlic paste: half tsp
Tomato: 2
Green chillis: 5 to 7
Cumin: half tsp
Dried coriander powder: 1 tsp
Methi: half tsp
Red pepper: half tsp
Turmeric powder: less than half tsp
Salt: according to your taste
Oil: according to your need
Green coriander: 1 cup Crushed

Preparation :

1: First of all cut brinjal and potatoes in equal size.

2: Onions, tomatoes, ginger and garlic chopped well.

3: In a handi or tensile add onions, garlic and ginger paste and fry them. Now add tomatoes in to it and fry them until their oil comes on surface of masalas.

4: Now add potatoes and brinjal and all above ingredients in to it except green coriander and cooked them.

5: when potatoes and brinjal well cooked then add green coriander and 2  Green chillis on it.

6: Tasty and delicious Allu bengan curry is ready to eat serve it.
